Gayo Wine is a unique coffee that originates from cherries grown at specific altitudes, similar to many other coffees. What sets it apart is the distinct processing method it undergoes. The coffee undergoes a fermentation process similar to how wine or alcohol is made from grapes, often referred to as the Wine process, Anaerobic process, or Anaerobic fermentation. What differentiates this coffee from others processed anaerobically is the duration of the fermentation, which significantly impacts the coffee’s flavor profile. The result is a complex, wine-like coffee with vibrant flavors of dried fruit, honey, cherry, and banana. Lemon, tamarind, hibiscus, and sugar cane add a refreshing tartness and sweetness, making this a dynamic and unique coffee experience.
