Ijen Mossto Washed
The Mossto Washed process involves fermenting the cherries in a tank for anaerobic fermentation for several days. Then, the cherries are pulped and fermented with coffee juice (mossto). After fermentation, the parchment is dried until the moisture content reaches 11-12%.
